Lightly spiced Caramelised parsnip and white onion soup

Chicken liver parfait , toasted brioche, mulled wine  jelly

Crispy squid and prawns, crab aioli

Spires confit duck leg , orange and pomegranate, Moroccan dressing 

Ham hock and kirkhams cheddar, black pudding, piccalilli sauce

 Crispy goats cheese, fig, orange and walnut, pickled golden beetroot (n)

Mains

Glazed  lamb shank, honey and rosemary, carrot and swede, lamb jus (£3.50 supplement)

Seared salmon, spinach, courgette ratatouille, crispy kale, fish sauce 

Goosnargh chicken, confit leeks and cabbage, pancetta, parsnip puree, mustard jus  

Baked butternut squash, puy lentils, wild mushroom peppered sauce

Starter

Duck trio-seared breast, crispy leg, parfait, clementine and pomegranate 

crispy squid, prawns and queen scallops, crab and lemon ailoi

goats cheese, orange, fig, walnuts, pickled golden beetroot

 confit of old spot pork belly, wild mushrooms, apple, cider and pancetta sauce

Braised Cumbrian  lamb shank, honey and thyme, carrot and swede, crispy prosciutto (£3.50 supplement)

Butternut squash, Swiss chard and chestnut wellington, caramelised parsnips, truffle cream 

Pan fried sea bass , Jerusalem artichoke, crab and saffron sauce

Goosnargh chicken , cranberry, garlic and rosemary, parsnip puree, chicken sauce
